Veg fried rice recipe / Easy vegetable fried rice

Veg fried rice is a dish of cooked rice that has been stir-fried in a wok or frying pan and mixed with sauteed veggies. Adding different kind of veggies is optional but I like to add beans, carrot and broccoli.

This will be better than restaurant style and it can be served with any curry or tomato ketchup. In addition spring onions give better taste for fried rice and as toppings. It is an Indo-Chinese recipe which is popular in most of the restaurants. It’s a simple fried rice which is less spicy and less time consuming. When ever I have left over veggies I tried to make fried rice which goes well with curry for a tasty lunch. Adding color capsicum to the fried rice gives nice color to the rice and it also tastes awesome. Kids will love this dish and it goes well with lunch box.We should always make our dish colorful by adding different veggies which is good for our diet.

I like Indo Chinese recipes a lot as those dishes are simple, less spicy with amazing taste. Every dish will be colorful and lip smacking. Whenever I have left over gravy as side dish I prefer veg fried rice as main course. Adding vinegar to the fried rice is optional but it gives nice tangy flavor to the dish.

Colorful and tasty veg fried rice which will taste better than restaurant style.

Ingredients
  • 1 cup cooked basmathi rice
  • 1/4 cup capsicum (chopped)
  • 1/2 cup beans (chopped)
  • 1/2 cup carrot (chopped)
  • 1/2 cup broccoli (optional)
  • 1/2 cup spring onions (also to garnish)
  • 1 tsp garlic (chopped)
  • 1/2 tsp sugar
  • 1 tsp vinegar (optional)
  • 1 tsp soy sauce
  • 3/4-1 tsp black pepper powder
  • salt to taste
  • 2 tsp olive oil
Instructions
  1. Cook basmathi rice in pressure cooker or on stove top and keep aside.

  2. Chop veggies and keep aside.

  3. Heat oil in a pan add chopped garlic and saute for few seconds.

  4. Now add spring onions, capsicum,beans, broccoli, carrot and saute well for few minutes or till it becomes crunchy.

  5. Then add soy sauce and mix well.

  6. Add vinegar and stir well.

  7. Now add black pepper powder, salt, sugar mix well.

  8. Add cooked basmathi rice and mix well.

  9. Add few spring onion as toppings and serve hot veg fried rice with any curry or ketchup.

Preparation of vegetable fried rice -step by step procedure

  • Cook basmathi rice in pressure cooker or on stove top and keep aside.
  • Chop veggies and keep aside.
  • Heat oil in a pan add chopped garlic and saute for few seconds.

  • Now add spring onions,capsicum, beans, broccoli, carrot and saute well for few minutes or till it becomes crunchy.

  • Then add soy sauce and mix well.

  • Add vinegar and stir well.

  • Now add black pepper powder.

  • Add salt,sugar then mix well.

  • Add cooked basmathi rice and mix well.

  • Finally few spring onion as toppings and serve hot veg fried rice with any curry or ketchup.

Note:

  • Rice grains should be separated and well cooked.
  • Any kind of veggies can be added to the fried rice. 
  • Adding soy sauce to the fried rice enhance the taste.
  • Adjust the quantity of black pepper powder according to your taste.
  • Adding vinegar is optional.
