Schezwan sauce recipe (step by step procedure)

Homemade schezwan sauce/schezwan chutney is famous to prepare few Chinese recipes noodles and fried rice. This was my first Chinese sauce recipe and it was incredibly tasty👌. This flavored sauce is so easy and Kashmiri red chillies were used to get nice bright red color to the sauce.

I tried schezwan noodles at different restaurants but this homemade sauce taste is the best. It was little spicy, sweet with amazing garlic flavor. Preparing restaurant style noodles with healthy and tasty is the best gift to our family. Oil should be added more to the sauce which helps sauce to stay fresh in refrigerator for 2-3 weeks. Vinegar gives amazing taste to the sauce but if not available you can add lemon juice.

Adding tomato ketchup to the sauce is optional but I added sugar which gives little sweet touch to the sauce. I was so flattered by the flavored sauce and I never had this amazing tasty schezwan noodles any where till now.  I promise there will not be any left overs of any dish prepared with this schezwan sauce.

 Seeds from the red chilli should be removed to decrease the spiciness of the sauce. But it’s optional if you need more spicy you can add with seeds. I always thought of schezwan noodles with store brought schezwan sauce but I am not interested to try it that way and in health point of view it’s better to prepare healthy and have a delicious recipes.I added few kashmiri chillies and few normal red chillies which gives little spicy to the sauce but it’s optional.You can find other Indo Chinese recipes here schezwan noodlesveg fried rice, veg momos, tofu manchurian, veg noodles

Delicious and tasty schezwan sauce gives amazing flavor which goes well for any Indo Chinese recipes.

Ingredients
  • 17 kashmiri chilli
  • 3 red chilli
  • 1 onion medium (chopped)
  • 4 garlic big (chopped)
  • 1 inch ginger (chopped)
  • 1/2 tsp soy sauce
  • 1 tsp vinegar or lemon juice
  • 4 tsp sugar
  • to taste salt
  • 4 tbsp oil
  • water as required
Instructions
  1. Soak kashmiri chilli and red chilli in hot water for 30 minutes.

  2. Add chillies in blender.

  3. Then add sufficient water to the chillies to grind in to fine paste.

  4. Heat oil in a pan add onion saute for few minutes till it becomes soft.

  5. Add chopped garlic, ginger and saute well till raw smell goes away.

  6. Now add red chilli paste and boil the sauce well till the oil comes out from the corners of the pan for 3-4 minutes.

  7. Add 1 tsp of vinegar or lemon juice to the sauce.

  8. Then add ½ tsp of soy sauce and saute for a minute.

  9. Now add sugar,salt mix well and simmer it for 2-3 minutes.

  10. Delicious homemade schezwan sauce is ready and store in refrigerator for 3-4 weeks.
