Obbattu/Holige/Puran poli recipe

Puran poli is also known as holige,obbattu,bobbatlu which is very popular traditional sweet in India🙏. The method of preparation may varies from place to place but it always everyone favorite dish for any festival.

The stuffing can be done with toor dal or channa dal. In Karnataka we prepare with toor dal and jaggery which will be soft and delicious😋. The dough will be prepared with all purpose flour, sooji , oil and methods of rolling stuffed dough also differ. My mom always gives us best traditional sweets and I should thank my mom for making me to learn this amazing dish. The size and thickness of puran poli also varies greatly. We prepare very thin obbattu which can be made soft or crispy. Adding coconut and cardamom powder to the toor dal stuffed mixture gives amazing taste to the dish. Ingredients
For dough
  • 1 1/4 cup all purpose flour / maida
  • 1/4 cup sooji
  • 3-4 tsp oil
  • a pinch salt
  • as needed water
For stuffing
  • 1 cup toor dal
  • 1 cup jaggery powder (2 tsp extra)
  • 2 tsp coconut (freshly grated)
  • 1 tsp cardamom powder
Instructions
For dough
  1. In a bowl add all purpose flour, sooji, salt, oil mix well and by adding little water knead the dough for 5 min till it becomes soft.

  2. Now add water to the dough till it soaks well and keep aside for 2-3 hours.

for stuffing
  1. In a pan add water, toor dal and boil well till dal becomes soft. (it should not be mushy)

  2. Once it cools down filter the mixture and you can use dal water for rasam or any other curries.

  3. Add soft dal to the pan and add jaggery powder and heat the mixture for few minutes till the jaggery melts.

  4. Cool down the mixture and transfer to the blender along with coconut, cardamom powder and grind in to fine paste.

Making Obbattu/holige/puran poli
  1. Remove the water from the dough .

  2. On a plastic paper sheet take little dough mixture flatten it and take one lemon sized dal stuffing and cover the sides with dough like paratha.

  3. Add little oil and place plastic cover on top then spread softly , evenly. Remove the pastic cover and transfer it to a hot flat pan.

  4. Apply oil on both sides and heat till appears golden spots.

  5. Puran poli / obbattu is ready to serve hot. Keep as prasadam before serving to your family.

Preparation of obbattu/holige – step by step procedure

For dough

  • In a bowl add all purpose flour, sooji, salt, oil mix well.

  • Puran poli / obbattu is ready to serve hot. Keep as prasadam before serving to your family.

Note:

  • If you need more sweet increase the quantity of jaggery.
  • Dal stuffed mixture can be made with toor dal or channa dal.
  • Left over dough can be stored in refrigerator for 2 days.
  • You can make thickness of obbattu according to your requirement.
