Eggless Vanilla cake Recipe without Condensed milk

This recipe is adopted from this blog. This eggless vanilla cake is also called as sponge cake/plum cake. You can store this cake in air tight container for one week.

Soft,rich and spongy eggless cake is easy and delicious recipe which is prepared with curd.

Ingredients
  • 1 1/2 cup all purpose flour/maida
  • 3/4 cup sugar
  • 1/2 cup oil
  • 1 cup curd
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla essence
Instructions
  1. Preheat oven at 350 F/180 C.

  2. Grease the cake pan with butter or add parchment paper or butter paper and keep aside.

  3. In a bowl sieve all purpose flour and keep aside.

  4. In other bowl add curd, sugar mix well.

  5. Now add baking powder, baking soda mix well and keep aside for 5minutes. (These powders will react with curd well and tiny bubbles will be formed on the surface)

  6. Add vanilla essence to the mixture and mix well.

  7. Then add ½ cup oil and mix well.

  8. Finally add all purpose flour/ maida and mix the batter well with out lumps.

  9. Now transfer batter to the cake pan and keep it in preheated oven for 25-30 minutes.(once it’s done prick with toothpick or knife and check it’s done or not)

  10. Once it turns in golden brown remove the cake from oven and keep aside to cool.

  11. Invert the cake pan and start slicing the cake.

Procedure for Eggless Vanilla Cake

Note:

  • Add any kind of vegetable oil to the cake. I used sunflower oil. Don’t use oil which gives strong smell.
  • Once you add baking powder and soda keep aside only for 5 minutes and not more than that.
  • In addition, quantity of sugar can be adjusted according to your taste.
  • You can add frosting to the cake if required and decorate the cake for any occasion.
  • This cake can be stored in air tight container for one week.
