Baked Eggplant Parmesan Recipe

A classic Italian baked eggplant Parmesan is delicious and healthy😋. This baked eggplant Parmesan layered with sauce and melted with cheese topping gives the perfect taste . Homemade eggplant Parmesan tastes better than olive garden.

First time I had this eggplant Parmesan at Olive garden, I really liked the taste and I thought to try homemade which will be easy and healthy😀. Once I started preparing homemade I never went to olive garden for this dish. When you check my recipe you may think it’s long process but I promise if you are well prepared before it doesn’t take much time from you. Homemade Pizza/pasta sauce is used for layering but you can use store brought sauce too. This sauce can be stored in refrigerator for few days so you should plan only for baking eggplant in this procedure and the preparation time will be reduced if you are well planned before. During weekends I try to do different recipes for lunch, eggplant Parmesan recipe is one of them.

Kids will love this recipe and I promise there will not be any leftovers😉. Baking eggplant slices is optional you can do on stove top too. But by baking it saves lot of time. Let’s get in to recipe👇

A classic Italian baked eggplant Parmesan is incredibly tasty, healthy and very easy to prepare at home

Ingredients
  • 1 eggplant slices
  • 1/2 cup all purpose flour/maida
  • 2 egg
  • 1 cup bread crumbs
  • 1 tsp water
  • 1 cup tomato pizza/pasta sauce
  • 1/2 cup Parmesan cheese optional
  • 3/4th cup mozzarella cheese
  • 1/2 tsp black pepper powder
  • salt to taste
  • 5-6 tsp olive oil
Instructions
  1. Cut the eggplant into 1/4 inch thick slices.

  2. Sprinkle 1 tsp of salt over all the slices of eggplant on both sides. Set the salted slices eggplant into a colander and let it rest for 30 minutes.

  3. Remove the eggplant from the colander, and place the slices on a paper towel or cloth and remove all the excess moisture formed on both sides.

  4. Take a plastic bag add all purpose flour and add eggplant slices and shake well so that all the slices will be equally coated.

  5. Then beat the eggs with 1 tsp of water and add to the tray.Add some salt and pepper mix well.

  6. Now one-by-one shake off the excess flour and place the slice of eggplant in the beaten egg

  7. Turn it over so that both sides get coated with egg.

  8. Now take bread crumbs in separate plate and put the egg coated slice into the crumbs and turn that over too.

  9. Press some of the crumbs into the eggplant making sure it is completely coated.

  10. Place prepared eggplant slices on a greased tray and place it in oven at 425 degree Fahrenheit for 18-20 minutes by turning over half-a- point until it gets nicely brown colored.(before placing in oven spread some oil on all the slices)

  11. In a baking dish spread some pasta / pizza sauce.

  12. Place crispy eggplant slices and spread some Parmesan and mozzarella cheese. Again place the eggplant slices spread some pasta/pizza sauce and sprinkle Parmesan and mozzarella cheese.

  13. Bake the eggplant Parmesan in a preheated 425 degree Fahrenheit oven for 10-15 minutes until the cheese is melted, golden and sauce is bubbly.

  14. Delicious eggplant Parmesan is ready to serve. Before serving sprinkle little black pepper.

Procedure for eggplant Parmesan Recipe-Step by Step procedure

       1. Slice the eggplant and to remove the moisture

  • Cut the eggplant into 1/4 inch thick slices.
  • Sprinkle 1 tsp of salt over all the slices of eggplant on both sides. Set the salted slices eggplant into a colander and let it rest for 30 minutes.

       2. Coating the eggplant with all purpose flour, egg, breadcrumbs

  • Take a plastic bag add all purpose flour and add eggplant slices and shake well so that all the slices will be equally coated.

  • Then beat the eggs with 1 tsp of water and add to the tray. Add some salt and pepper mix well.
  • Now one-by-one shake off the excess flour and place the slice of eggplant in the beaten egg.Turn it over so that both sides get coated with egg.

  • Now take bread crumbs in separate plate and put the egg coated slice into the crumbs and turn that over too.

  • Press some of the crumbs into the eggplant making sure it is completely coated.

       3. Baking eggplant slices to crispy golden brown color

  • Place prepared eggplant slices on a greased tray.

  • Place it in oven at 425 degree Fahrenheit for 18-20 minutes by turning over half-a- point until it gets nicely brown colored.(before placing in oven spread some oil on all the slices)

      4. Layering with homemade sauce , baked eggplant slices, topping with cheese

  • Place crispy eggplant slices and spread some Parmesan and mozzarella cheese. Again place the eggplant slices spread some pasta/pizza sauce and sprinkle Parmesan and mozzarella cheese.

      5. Baking 

  • Bake the eggplant Parmesan in a preheated 425 degree Fahrenheit oven for 10-15 minutes until the cheese is melted,golden in color and sauce is bubbly.

  • Delicious eggplant Parmesan is ready to serve. Before serving sprinkle little black pepper.

Note:

  • Baking eggplant slices is optional. You can fry on stove top too. Spread some oil on a hot pan place coated slices and fry on both sides till it gets golden brown color.
  • You can use pizza/ pasta sauce for layering eggplant Parmesan.
  • Once cheese is melted you can keep in broil for 5 minutes until golden spots appeared on the cheese.
  • Left over Parmesan can be stored in refrigerator and heat in microwave before you serve.
  • Parmesan cheese is optional for layering you can use only mozzarella or any kind of cheese.
