Baingan bharta recipe (oven roasted eggplant)

Very popular Punjabi dish baingan bharta  is a vegetarian dish prepared by mincing eggplant(baingan) that is grilled over charcoal / baked/ direct fire. As we have only induction stove  at home I tried this tasty dish by baking the eggplant. Baingan bharta is also known as mashed eggplant 🍆.

This infuses the dish with smoky flavor. The smoked and mashed eggplant is mixed with few spicy powders stir fried with onion and tomato. Finally garnish with cilantro or coriander leaves before serving. Traditionally, this dish is served with roti or rice. This dish is very less time consuming and the smoky flavor enhance the taste of the dish😋. By baking it took me 30 min and the last 5 minutes I kept in broil so that eggplant will get nice smoky flavor to the dish. One of my favorite recipe with eggplant is eggplant parmesan which is one of the regular recipes I do by baking and now baingan bharta will be my regular dish too.

I guarantee that this oven roasted eggplant will be your favorite recipe once you tasted this amazing dish. If doing it on fire just keep an eye and keep turning the eggplant until it cooks evenly.I prefer most of the recipes by baking which is good for health and less time consuming. Oven roasted baingan bharta which gives with amazing smoky flavor to the dish. It goes well with rice or roti.

Ingredients
  • 1 eggplant
  • 1 onion medium (chopped)
  • 2 tomato (chopped)
  • 1 tsp garlic (chopped)
  • 1-2 green chilli (chopped)
  • 1/2 tsp jeera
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/4 tsp turmeric
  • 1 tsp coriander leaves (chopped) (optional)
  • salt to taste
  • 2 tsp olive oil
Instructions
  1. Preheat oven at 415 degree Fahrenheit.

  2. Make 3-4 cuts to the eggplant with knife to cook evenly.

  3. Apply 1 tsp of olive oil to the eggplant and place it on greased aluminum sheet.

  4. Bake it for 25-30 min until it becomes soft.(make sure to turn eggplant for every 10 minutes).

  5. Then keep it in broil for 5 minutes. (This step is optional to get nice smoky flavor)

  6. Once it cool down remove the skin and smash the eggplant well and keep aside. (After removing from oven prick the eggplant with knife and check it’s cooked or not. If it is still uncooked you can bake until it’s done)

  7. Heat oil in a pan add jeera saute for few seconds. Add chopped garlic and green chilli and saute for a minute.

  8. Now add onions and fry till it becomes translucent.

  9. It’s time to add chopped tomato, turmeric, red chilli powder, coriander powder, garam masala mix well and saute till tomato becomes soft.

  10. Then add smashed eggplant , salt mix well. Garnish with coriander leaves before serving.

  11. Serve hot smoky flavored baingan bharta with roti or rice.

Preparation of baingan bharta- step by step pictures

  • Preheat oven at 415 degree Fahrenheit.
  • Make 3-4 cuts to the eggplant with knife to cook evenly.

  • Then add smashed eggplant , salt mix well. Garnish with coriander leaves before serving.

  • Serve hot smoky flavored baingan bharta with roti or rice.

Note:

  • You can cook eggplant by baking or on fire or by grilled over charcoal.
  • Baking in broil is optional.
  • Adjust the quantity of red chilli powder , green chilli according to your taste.
  • You can add amchur powder to the dish but it’s optional.
